Pakistani Beef Curry

You can use Pakistani curry powder instead of the bunch of spices.

Ingredients

Turmeric
Cayenne pepper
Cumin powder
Cumin seeds
Paprica
Clove
Nutmeg
Cinnamon
Coriander
Garam Masala
Salt
Onion
Tomato puree
Beef

When you cook with the Educooker003 the amounts of ingredients are as follows.

Mix all the spice of 0.5 teaspoons and 1 tablespoon of salt.
Grate 1 small onion and mix with 2 tablespoons of tomato puree. Cut the meat in thin slices or small dices.
Mix all the ingredients and add a cup of watar in a pot.
Solarcook at least 90 min.

Prao(Pakistani rice pilaf)

1. Put 1 tablespoon of vegetable oil and 4-5 tablespoons of garam masala and mix well.
2. Add 1.5 cups of water and heat to a boil.
3. Add 1 cup of washed rice, green peas, and diced potatos.
4. Solarcook until done.
5. When the rice is cooked, add chopped and fried onions. Wait for a few minutes for the rice to absorb the taste of the onions.

Jellof Rice (Kenyan rice pilaf)

1. Mix 3 cups of rice, chopped fresh corianders, diced carots, tomatos, sliced garlic, salt, and artificial flavoring.
2. Add boiled water and a half cup of vegetable oil
3. Solarcook until done.

Banana soup(Tanzanian recipe)

You can use either unripe green fruit banana or plantain. Use ordinary potato for plantain when you cannot find one on the market.

1. Cut 1 onion, 1 tomato, and a piece of garlic into very small dices and fry in a pan with vegetable oil.
2. Slice 1 banana.
3. Add red kidney beans, coconut milk, beef, a teaspoon of butter, salt, black pepper, and 3 cups of water.
4. When you use an Educooker003, divide the material into 2 same amounts and cook one of them for 90 minutes.

Shorba Chicken(Tunisian recipe)

It needs a lot of time to prepare and cook but I guarantee the taste. You can serve it cold in summer.

1. Grate 1 onion, a half of potato, and a half of zucchini. (I use food processor.)
2. Dice 300g of chicken, a half of carrot, and a half of celery.
3. Add canned chickpeas, 2 teaspoons of salt, a half teaspoon of black pepper, a teaspoon of paprica. a half teaspoon of cinnamon, 2 teaspoons of tomato puree, 2-4 cups of water, a few slices of lemon, risoni pasta, and finely chopped parsley and mint.
4. Divide it to 500ml and put it in a pot and solarcook at least 90 minutes.

Hot dessert of orange.

Just enjoy the harmony of hot fruit puree and cold icecream.

1. Peel 2-3 oranges, 2 kiwi fruits and slice them. You can also add bananas or strawberries.
2. Add 200g of orange juice, 40-50g of sugar, and 30cc of white curacao. 3. Solarcook for 60-90 minutes. Serve it with a scoop of icecream and a piece of fresh mint.

Japanese steamed pound cake

Use concentrator type cooker to steam the cake. By adding sweetened adzuki beans, you can emphasize the Japanese taste. Put a little amount of water in the pan and raise the level of cakes with some small plates to steam them.

Weak flour 100g
Egg 1/2
Milk 85cc
Honey 15g
Sugar 50g
Green tea powder 3g
Sweetened adzuki beans
Baking powder 5g
Salt 1/2g

1. Put egg, milk, honey, sugar into the bowl and mix well.
2. Add weak flour, baking powder, and green tea powder with a sifter and mix well. Add sweetened adzuki beans and mix softly.
3. Divide it into paper cups and steam it with a concentrator type solar cooker.

Rice Pizza

Use rice powder instead of flour. (It makes it easier to bake.) 

Rice powder 100g
Wheat gluten 10g
Yeast 2.5g
Hot water 75ml
Sugar 1/2 tablespoon
Salt 2g
Olive oil 10ml
Tomato ketchup 2 tablespoons
Tomato 2-3
Corn 1/2 can
Cheese 60g

1. Mix yeast and hot water and wait for 5 min.
2. Mix rice powder, wheat gluten, sugar and salt and make a dent in the center of the dough. Put the mixture of 1 into the dent and knead it with olive oil.
3. Leave it for 40 min.
4. Expand it on cooking sheet.
5. Put ketchup, cheese and anything you want on the pizza. Set it in a solar cooker and heat it. (I recommend box type.)

Tuna Spaghetti

 Use thin spaghetti for salad. When it is too long for the pan, break it to half length. You do not need much water. When the spaghetti is done, there remains almost no water around it. A Spanish friend of mine told me this method.

Thinnest spaghetti (Capellini) 200g
Water 300cc
Canned tuna in oil 1 can
Black pepper and salt 1/2 tablespoon each
Mayonnaise 2 large spoons Leaf of green perilla a few (if available)

1. Put spaghetti, water, salt, black pepper, and tuna with oil into the pan and mix it gently. Add small amount of water if some of the spaghetti is above the water.
2. Cook for an hour in a box type or a panel type solar cooker.
3. Disentanble the spaghetti with chopsticks or a folk.
4. Mix with mayonnaise and finely sliced perilla leaves.
5. Will serve three people as a side dish.

saladpasta

Tofu Refuse Brownie

 You do not need flour to make this healthy brownie. Use tofu refuse (or Okara) instead. If you cannot find tofu refuse in the supermarkets in your country, come to Japan.

Butter or margarine   100 g
Sugar   140 g
Cocoa powder   30 g
Baking powder   2 teaspoon
Vanilla extract   a few dashes
Egg    3
Tofu refuse (or grated Koya-tofu with small amount of water)   150 g
Walnut(if available) around ten small pieces

1. Mix butter and sugar in a bowl.
2. Put cocoa powder, baking powder, vanilla essence, eggs, tofu refuse one by one in order and mix vigorously.
3. Put the mix in a black flat baking tray evenly and garnish with small pieces of walnut. Bake it 90 minutes in a panel type solar cooker, or 1 hour in a box type solar cooker after preheating.

Chocolate Zucchini Cake

 You can also make popular chocolate zucchini cake with a solar cooker easily.

Butter 1 table spoon
Vegitable oil   60g
Sugar   60g
Cocoa powder   2 large spoon
Salt   1/4 table spoon
Pancake mix   200g
Egg    2
Chocolate chips   1/4 cup
Crushed walnut   1/4 cup
Milk    30cc
Cinamon powder 1/2 teaspoon
Zucchini (grated) 1

1. Mix butter, sugar, eggs, milk, cinamon, salt, cocoa powder in a bowl vigorously.
2. Add pancake mix, chocolate chips, walnut and mix.
3. Bake it 90 minutes in a panel type solar cooker, or 1 hour in a box type solar cooker after preheating.

zucchinicake

Doro Wat (Ethiopian cuisine)

 Doro Wat is spicy chicken stew. It is one of my most favorite dishes I tried in Ivory Coast.

Chicken (Thigh with skin)  300g
Boild egg (peeled) 2〜3
Grated onion  150cc
Berbere (Chilli powder based spice mix)   1 large spoon
Olive oil 1 table spoon
Honey 1 large spoon
Butter 8g (or 1 table spoon)
Salt 1/4 table spoon
lemon juice 1 table spoon
Garlic small amount
Ginger small amount
White wine 50cc
Water 50cc

1. Cut chicken into bite-sized pieces.
2. Mix all the ingredients and put it in a black pan with a lid.
3. Set it with a solar cooker and cook 1.5 to 2 hours. When you cook it more than 2 hours, the meat will become very very tender.

You can buy berbere through Amazon or prepare it by grinding dried red peppers, coriander seeds,
cumin seeds, whole green cardamom, whole allspice, whole cloves, and fenugreek.
My Lithuanian student guaranteed it is a real ethiopian cuisine.

Kedjenou (Ivorian cuisine)

 Kedjenou means "to mix". In many cases it is cooked without adding water. The following is a recipe for Kedjenou
de poulet but you can use any kinds of meat or fish instead of chicken.

Chicken (Thigh with skin) 500g
Egg plant (peeled) 1
Tomato 2 medium sized
Tomato pulee (when the tomato is not ripe enough)  2〜3 large spoon
Okra 5,6
Green pepper  5,6個
Grated onion  1/2
Chopped onion  1/2
Olive oil 1 large spoon
Chicken consomme cube 1
Butter  8g (or 1 table spoon)
Salt 1/4 table spoon
Chilli pepper powder (if you like hot foods)
Garlic small amount
Ginger small amount
Nutmeg powder small amount
Fresh thyme (if you have) small amount

1. Cut chicken into bite-sized pieces. Cut okra in half. Cut peeled egg plants in round slices.
2. Mix all the ingredients and put it in a black pan with a lid.
3. Set it with a solar cooker and cook 1.5 to 2 hours. When you cook it more than 2 hours, the meat will become very very tender.

All my African students including the Ivorian one said it reminded them home.
